Bagel burgers

with sweet potato wedges

  • 100 g Bacon

  • 4 units Bagels

  • 4 slice Bergkäse (Alpine cheese)

  • 1 tsp Cajun spice

  • 1 pinch Cayenne pepper

  • 0.5 units Chilli pepper

  • 1 pinch Cumin

  • 5 units Dates

  • 3 clove Garlic

  • 1 pinch Garlic granules

  • 2 units Gherkins

  • 0.5 tsp Ginger (ground)

  • 3 tbsp Maple syrup

  • 800 g Minced beef

  • 1 units Oxheart tomato

  • 0.5 tsp Paprika powder (smoked)

  • 1 pinch Pepper (ground)

  • 30 g Rice starch

  • 50 g Rocket

  • 2 sprig Rosemary

  • 20 g Sea salt

  • 2 units Shallots

  • 1 tsp Smoked salt

  • 30 g Soy sauce

  • 4 tbsp Sunflower oil

  • 500 g Sweet potatoes

  • 2 sprig Thyme

  • 2 tbsp Tomato purée

  • 250 g Tomato sauce

  • 0.5 tbsp paprika (sweet)

Method

  • Prepare the sweet potato wedges

    Peel the sweet potatoes, cut into wedges and soak in cold water for approx. 1 hr.

  • Ingredients

  • 500 g Sweet potatoes

  • Prepare barbecue sauce

    Peel the garlic and shallots and roughly chop together with the dates.

    Dice the bacon and fry in a pan with the thyme and rosemary in a little oil. As soon as the bacon is golden brown, add the garlic, shallots and dates and fry for 5-10 minutes. Then stir in the tomato purée and fry for approx. 3 mins.

    Then add the remaining ingredients and simmer over a low heat for approx. 20 mins.

    Remove the thyme and rosemary and blend the mixture with a hand blender for 10 mins. until smooth.

  • 3 clove Garlic, 2 units Shallots, 5 units Dates, 100 g Bacon, 2 sprig Thyme, 2 sprig Rosemary, 1 tbsp Sunflower oil, 2 tbsp Tomato purée, 250 g Tomato sauce, 30 g Soy sauce, 2 tbsp Maple syrup, 0.5 units Chilli pepper, 0.5 tsp Ginger (ground), 1 tsp Smoked salt, 1 tsp Cajun spice, 1 pinch Pepper (ground)

  • Preheat the oven

    Preheat the oven to 220°C fan oven.

     

    Line a baking tray with baking paper.

  • Prepare the sweet potato wedges

    Drain the water from the sweet potatoes, place the slices on a cloth and dry well. Turn the slices in starch.

    Mix the oil, agave syrup and spices in a bowl and marinate the sweet potatoes in the mixture.

  • Ingredients

  • 30 g Rice starch, 2 tbsp Sunflower oil, 0.5 tsp Paprika powder (smoked), 1 tbsp Maple syrup, 20 g Sea salt, 1 pinch Cayenne pepper, 0.5 tbsp paprika (sweet), 1 pinch Cumin, 1 pinch Garlic granules

  • Bake sweet potato wedges

    Place the wedges next to each other on a baking tray and place in the oven for approx. 30–35 minutes.

  • Prepare the patties

    Knead the mince well and shape into four 200 g patties.

    The patties should be slightly larger than the bagels, as they will shrink during frying.

    Heat a pan with oil and fry the patties for approx. 5 mins. on each side.

  • Ingredients

  • 800 g Minced beef, 1 tbsp Sunflower oil

  • Prepare the remaining ingredients

    In the same pan, toast the sliced bagels cut side down in the residual heat on both sides.

    Wash the tomato, remove the stem and cut into four slices of equal thickness.

    Wash the rocket and shake dry. Cut the gherkins into slices of the same thickness.

  • Ingredients

  • 4 units Bagels, 1 units Oxheart tomato, 50 g Rocket, 2 units Gherkins

  • Finishing touches

    Layer the burgers: Spread some barbecue sauce on the bottom half of the bagel, then place the meat patty, cheese, tomato and cucumber slices and rocket on top. Cover with the top half of the bagel

    Serve with the sweet potato wedges and enjoy.
