30 G rice starch
50 G rocket
2 Gren rosemary
20 G sea salt

1 Teskje smoked salt
30 G soy sauce

0.5 Teskje sweet paprika

2 Gren thyme
2 Spiseskje tomato purée
250 G tomato sauce
Peel the sweet potatoes, cut into wedges and soak in cold water for about 1 hour.

Peel the garlic and shallots and roughly chop together with the dates.
Dice the bacon and fry in a pan in a little oil with the thyme and rosemary. As soon as the bacon is golden brown, add the garlic, shallots and dates and fry for 5 to 10 minutes. Then stir in the tomato purée and toast for about 3 minutes.
Then add the remaining ingredients and simmer over a low heat for about 20 minutes.
Remove the thyme and rosemary and blend the mixture with a hand blender for 10 minutes until smooth.

Preheat the oven to 220 °C (fan-assisted).
Line a baking tray with baking paper.
Drain the water from the sweet potatoes, place them on a tea towel and dry well. Coat the wedges in rice starch.
Mix the oil, agave syrup and spices in a bowl and marinate the sweet potatoes in the mixture.

Place the wedges side by side on a baking tray and place in the oven for about 30 to 35 minutes.
Knead the mince well and shape into four 200 g patties.
The patties should be slightly larger than the bagels, as they will shrink while frying.
Heat oil in a frying pan and fry the patties for about 5 minutes on each side.

In the same pan, use the residual heat to toast the sliced bagels cut side down.
Wash the tomato, remove the stem and cut into four slices of equal thickness.
Wash the rocket and shake dry. Evenly slice the gherkins.

Layer the burgers: spread some barbecue sauce on the bottom half of the bagel, then place the meat patty, cheese, tomato and gherkin slices and rocket on top. Cover with the top half of the bagel.
Serve with the sweet potato wedges and enjoy.
