Bagel burgers

with sweet potato wedges

  • 100 g Bacon

  • 4 units Bagels

  • 4 slice Bergkäse (Alpine cheese)

  • 1 tsp Cajun spice

  • 1 pinch Cayenne pepper

  • 0.5 units Chilli pepper

  • 1 pinch Cumin

  • 5 units Dates

  • 1 pinch Freshly ground pepper

  • 3 clove, tsp Garlic

  • 1 pinch Garlic granules

  • 2 units Gherkins

  • 0.5 tsp Ground ginger

  • 3 tbsp Maple syrup

  • 800 g Minced beef

  • 1 units Oxheart tomato

  • 30 g Rice starch

  • 50 g Rocket

  • 2 sprig Rosemary

  • 20 g Sea salt

  • 2 units Shallots

  • 0.5 tsp Smoked paprika

  • 1 tsp Smoked salt

  • 30 g Soy sauce

  • 40 ml Sunflower oil

  • 2 tbsp Sunflower oil

  • 0.5 tbsp Sweet paprika

  • 500 g Sweet potatoes

  • 2 sprig Thyme

  • 2 tbsp Tomato purée

  • 250 g Tomato sauce

Method

  • Prepare the sweet potato wedges

    Wash and peel the sweet potatoes, cut them into wedges, and soak in cold water for about 1 hour.

  • Ingredients

  • 500 g Sweet potatoes

  • Prepare the barbecue sauce

    Peel the garlic and shallots, and roughly chop them together with the dates.


    Dice the bacon and sauté it with thyme and rosemary in a little oil in a pot. Once the bacon is golden brown, add the garlic, shallots, and dates and cook everything for 5–10 minutes. Then stir in the tomato paste and sauté for about 3 minutes.


    Next, add the remaining ingredients and simmer everything over low heat for about 20 minutes.


    Remove the thyme and rosemary, and puree the mixture with an immersion blender until smooth, about 10 minutes.

  • Prepare the sweet potato wedges

    Drain the water from the sweet potatoes, place the wedges on a cloth and dry well. Turn the wedges in starch.

     

    Mix the oil, agave syrup and spices in a bowl and marinate the sweet potatoes in the mixture.

  • 30 g Rice starch, 40 ml Sunflower oil, 1 tbsp Maple syrup, 20 g Sea salt, 1 pinch Cayenne pepper, 0.5 tbsp Sweet paprika, 0.5 tsp Smoked paprika, 1 pinch Cumin, 1 pinch Garlic granules

  • Bake the sweet potato wedges

    Preheat the oven to 220 degrees fan.

     

    Place the wedges next to each other on a baking tray and place in the oven for approx. 30-35 mins.

  • Prepare the patties

    Knead the mince well and shape into four 200 g patties.

     

    The patties should be slightly larger than the bagels, as they will shrink during frying.

     

    Heat a pan with oil and fry the patties for approx. 5 mins. on each side.

  • Ingredients

  • 800 g Minced beef, 1 tbsp Sunflower oil

  • Prepare the remaining ingredients

    In the same pan, toast the sliced bagels cut-side down on both sides in the residual heat.

     

    Wash the tomato and, after removing the stalks, cut into four slices of equal thickness.

     

    Wash the rocket and shake dry and cut the gherkins into slices of the same thickness.

  • 4 units Bagels, 1 units Oxheart tomato, 50 g Rocket, 2 units Gherkins

  • Finish

    Layer the burgers: Spread some barbecue sauce on the bottom half of the bagel, then place the meat patty, cheese, tomato slices, cucumber slices and rocket on top. Cover with the top half of the bagel.

     

    Serve with the sweet potato wedges and enjoy.
